Forgo the buffet and serve up your Chinese buffet favourites right at home, like these sweet and sour tofu dumplings.
Directions for: Sweet and Sour Tofu Dumplings
Ingredients
1 Tbsp cornstarch
1 Tbsp cold water
cup pineapple juice
cup rice vinegar
cup granulated sugar
2 Tbsp ketchup
1 Tbsp soy sauce
tsp red food dye (optional)
1 (350 g) package extra-firm tofu, drained well
tsp sesame oil
20 fresh square wonton wrappers
Directions
1. In a medium saucepan, whisk cornstarch and water. Slowly whisk in juice, vinegar, sugar, ketchup, soy sauce and food dye, if using. Whisking constantly, bring mixture to a boil and continue to cook for 30 seconds. Remove from heat. Cool slightly.
2. Set up a large flat-bottomed steamed basket or tiered bamboo steamer basket; brush bottoms with sesame oil. Fill bottom of pot with a small amount of water for steaming.
3. Roughly crumble tofu into a large bowl. Add 2/3 cup sweet and sour sauce. Mix to combine.
4. Add 1 to 2 tsp tofu mixture in the centre of each wonton wrapper. Brush edges with water and fold all corners up to clasp in the middle. Transfer to steamer basket. Repeat with remaining tofu filling and wonton wrappers.
5. Steam for 8 to 10 minutes, until warmed through and sealed. Transfer to a serving plate. Serve with additional sweet and sour sauce for dipping.
