Directions for: Sweet Potato Fries with Chili Coconut Dip
Ingredients
Sweet Potato Fries2 L vegetable oil
tsp salt
tsp smoked paprika
tsp ground cardamom
2 medium sweet potatoes, peeled
cup cornstarch
Chili Coconut Dip1 Tbsp grapeseed oil
tsp brown mustard seeds
cup dried curry leaves, crushed
tsp ground coriander
tsp red chili powder
1 pinch salt
1 pinch pepper
3 Tbsp unsweetened coconut flakes
1 pinch salt
cup mayonnaise
Directions
Sweet Potato Fries1. Heat oil in a large pot with a heavy bottom, or in a deep fryer to 350F. Make sure the oil level is no more than one third of the pot as it will rise during the frying process.
2. Mix the paprika, cardamom and salt together in a small bowl.
3. Cut the sweet potatoes into 1/4-inch thick slices and then cut the slices into 1/4-inch sticks. Put the cornstarch into a large bowl and add the sweet potatoes and toss well using your hands to make sure they are well coated. Working in batches, fry in the hot oil until golden brown, about 6-7 minutes. Drain on paper towels and then sprinkle liberally with spice mixture. Serve with Chili Coconut Dip (see recipe).
Chili Coconut Dip1. Heat the oil in a skillet and add the spices, salt and pepper and coconut. Toast for about 2-3 minutes, until coconut is golden brown. Place in a bowl with the mayonnaise and stir well to combine. Serve with Sweet Potato Fries.
