Ingredients
Popcorn Chicken3 boneless organic chicken breasts, cubed
1 cup buttermilk
1 tsp sea salt
1 cup all-purpose flour
1 tsp sea salt
1 tsp baking powder
2 tsp cayenne pepper
tsp dried oregano
tsp turmeric
1 Tbsp onion powder
Freshly cracked pepper
Canola or vegetable oil, for deep-frying
Bruschetta3 cup cherry tomatoes, halved
cup Kalamata olives, pitted and sliced
red Thai chili
2 garlic cloves, minced
4-5 basil leaves, torn
cup parsley, minced
5-6 oregano leaves, torn
3 Tbsp extra virgin olive oil
2 Tbsp aged balsamic vinegar
1 tsp raw sugar
Sea salt
Freshly cracked black pepper
Italian Style1 fresh baguette
3 garlic cloves, halved
Parmigianno shavings
Southern Style6 store bought buttermilk waffles
Maple syrup
Directions
Popcorn Chicken1. Making the popcorn chicken: Place chicken in large bowl. Add buttermilk, sea salt, and stir. Make sure the chicken is completely submerged. Cover and marinate for minimum 2 hours or overnight. In large re-sealable bag add flour, sea salt, baking powder, cayenne pepper, dried oregano, turmeric, onion powder, and pepper. Seal bag and mix. Take chicken out of buttermilk marinade, shake excess liquid, and place in seasoning bag. Mix until chicken is well covered. Remove fro bag and shake excess. Fry in 350F canola oil for 3 to 4 minutes, until brown and cooked through. Drain on wire rack.
Bruschetta1. Making the bruschetta: In a food processor add tomatoes, Kalamata olives, Thai chili, garlic cloves, basil leaves, parsley, oregano leaves, olive oil, balsamic vinegar, raw sugar, sea salt, and pepper. Pulse 3-4 times, until mixed.
Italian Style1. Cut a fresh baguette into three equal pieces. Slice each piece in half horizontally. Grill or toast the bread until golden. Rub baguette with garlic clove. Place baguettes and bruschetta on buffet table. Spoon some bruschetta on baguette, place popcorn chicken, and top with parmigianno shavings.
Southern Style1. Place waffles and maple syrup on buffet table. Place popcorn chicken on a waffle and drizzle with maple syrup.
