Directions for: Savoury Strata
Ingredients
Savoury Strata4 cup cubed french bread (1/2 inch/ 1 cm) (1L)
2 cup cooked small broccoli florets (500ml)
diced red pepper (125ml)
cup diced yellow or green zucchini (125ml)
1 green onion, thinly sliced
butter
7 large eggs, lightly beaten
2 cup milk (550ml)
1 tsp Dijon mustard (5ml)
tsp each salt and pepper
Adults:cup crumbled chevre or feta cheese (125ml)
pinch dried thyme (pinch)
Children:cup shredded mozzarella cheese (125ml)
1 Tbsp finely chopped fresh parsley (15ml)
Directions
Savoury Strata1. Preheat oven to 350 F/180 C. Grease 2 9-inch/23 cm glass pie plates with butter.
2. Divide bread cubes equally between the 2 pie plates, followed by the broccoli, red pepper, zucchini and green onion. Top 1 pie plate mixture with the mozzarella and parsley combo, and the other with the chevre and thyme combo.
3. Whisk the eggs in a bowl with the milk, Dijon, salt and pepper and pour equal amounts over each strata. Bake stratas on the center oven rack for 35-40 minutes, or until eggs are set and golden. Let sit for 10 minutes, slice and serve.
Tip: If you want to make smaller, personal stratas, follow the instructions above and divide the variations between 6 1-cup/250 mL volume ramekins, making 3 of each. You could use frozen broccoli, thawed, if you dont have fresh on hand.
