Poached Chicken - ★Cooking Recipes★

Directions for: Poached Chicken

Ingredients

1 chicken, about 2 kg (4.5 lb), skin removed

2 branch branches celery, cut crosswise into large pieces

2 carrots, cut crosswise into large pieces

2 onions, peeled and cut into wedges

2 sprig sprigs fresh thyme

4 sprig sprigs flat-leaf parsley

2 bay leaves

1 tsp peppercorns

1 pinch Salt

Directions

1. Place the chicken in a Dutch oven and add cold water to cover completely. Add the remaining ingredients and a large pinch of salt. Bring to a boil, reduce the heat and simmer gently, uncovered, until the meat pulls easily from the bone, about 90 minutes. Skim off any foam that appears during cooking. Remove the chicken from the saucepan. Drain and let cool. Debone.

2. Reserve half the chicken for Chicken Pot Pie (see recipe) and the other half for Chicken Noodle Soup (see recipe).

3. Strain the broth. Reserve for Chicken Noodle Soup.
