Years ago I was on Santorini for a week and right down the street from the hotel was a little stand that sold souvlaki in a pita. The pitas were so crispy and savoury, and I couldnt figure out what the owner was doing to them to make them so delicious, so I finally asked him. He showed me this simple method. If you are making a few of these, and if you have a large flat top griddle, do them all at the same time. If you dont have that, you can do them one at a time in a frying pan. You can keep the pitas warm in the oven so that you can serve everyone at the same time, but honestly, the pitas are better and crispier if you serve them right away after they come out of the pan. If Im ever making these for a bunch of people, I just tell them why theyre all getting their pitas separately, and no one ever seems to mind.

Directions for: Greek Pita
Ingredients
1 cup chopped cucumber
1 cup chopped tomato
cup chopped red onion
1 cup shredded iceberg lettuce
4 greek style pitas
2 tsp paprika
2 tsp garlic powder
5 tsp canola oil
cup tzatziki
cup crumbled feta cheese
1 pkg meatless chicken tenders (optional)
Directions
1. Preheat oven to 200, just to keep pitas warm while you cook the rest.
2. Put 1 teaspoon of oil in a frying pan and heat over medium heat. Add chicken tenders and cook til browned on all sides. Set aside.
3. Wipe out frying pan and put back on heat. Add 1 t oil.
4. Sprinkle one side of the first pita with 1/4 teaspoon each of paprika and garlic powder.
5. Put pita in pan with the spiced side down. Sprinkle the other side with more paprika and garlic powder.
6. Let cook for a minute or two, until the pita is crispy. Turn over and cook other side. If pan seems totally dry, add a little more oil to cook the second side.
7. Repeat with each pita, wiping pan out with cloth or paper towel in between each one.
8. When pitas are done, put on baking sheet and keep warm in oven.
9. Lay out 4 squares of tin foil, a couple of inches wider than the pitas.
10. Lay pitas on foil, with one edge of the pita hanging very slightly over the top.
11. Vertically down the middle of each pita, put a quarter of the tzatziki, feta, meatless chicken and veggies.
12. Use the foil to roll the pitas up, by pulling both sides together and then folding the bottom up to form a little package.
13. To eat, just unroll the foil as you go.
