Crispy coated rounds of eggplant are topped with a silky green pea sauce.

Ingredients
Golden Eggplantcup chickpea flour
1 tsp coriander powder
1 tsp cardamom powder
1 tsp Spanish paprika
pinch chili pepper flakes
1 Tbsp garam masala
pinch of salt
freshly ground pepper
cup yogurt
2 Tbsp water
1 eggplant, sliced into 1/4 inch slices
2 Tbsp grapeseed oil
juice of 1/2 a lemon
Green Pea Sauce2 cup cooked peas
cup yogurt
cup water
1 tsp ground coriander powder
1 tsp ground cumin powder
pinch of salt and freshly ground black pepper
Directions
Golden Eggplant1. In a large bowl combine chickpea flour, spices, salt, pepper, yogurt and water and mix well. It should have a pancake batter consistency. If it seems too thick, add a little extra water to thin it out.
2. Begin to heat the oil over medium-high heat and dip the eggplant slices in the batter and then place into the hot oil. Fry on the first side, turning the heat down to medium and cook until golden brown, about 3 to 5 minutes. Carefully flip the slices and fry on the other side until eggplant is tender and golden on both sides, about 6 minutes total. Drain on rack and then place on a serving plate and squeeze fresh lemon juice over them. Serve with Green Pea Sauce.
Green Pea Sauce1. Put everything in a blender and puree until smooth. It should be a thick saucy consistency.
2. Makes approx. 3 cups.
