Directions for: Camembert with Fig and Pears

Ingredients

8 oz dried black mission figs (227 g)

1 cup red wine (375 ml)

2 Tbsp brandy (30 ml)

1 cup sugar (250 ml)

1 large sprig fresh thyme

2 2 inch (5 cm) pieces of orange zest

4 whole star anise

1 cinnamon stick

1 wheel French Camembert cheese, at room temperature for 1 hour prior to serving

6 rip Forelle pears, cored and cut into wedges

1 loaf of artisan fruit and nut bread, sliced

Directions

1. In a heavy bottom saucepan, combine all the ingredients, over medium-high heat. Bring to a boil and reduce the heat to a simmer.

2. Simmer the jam for 45 minutes and then remove from the heat and cool.

3. Discard the thyme, orange zest, star anise and cinnamon stick.

4. Pour the cooked figs into a food processor and process until a thick spread is formed. Pour the jam into a serving dish.

5. Arrange the Camembert, pears, bread and fig jam on a large wooden board and serve.
