Ingredients

4 medium beet, roasted, peeled, and, diced

cup red onion, finely, diced

1 pinch cayenne pepper

tsp lemon, zest

1 tsp lemon, juice

1 Tbsp walnuts, chopped

Directions

1. Preheat oven to 400 degrees F

2. To roast the beets, place them in a pan with a little water, cover with tinfoil and bake for 45 to 60 minutes until tender.

3. Cool, then peel and dice beets. Place in a bowl.

4. In a skillet, saut onions in olive oil for 1 to 2 minutes.

5. Add to beets along with the rest of the ingredients. Mix and adjust seasoning.
