Fresh Herb Khoresh and Rice - ★Cooking Recipes★

Directions for: Fresh Herb Khoresh and Rice

Ingredients

1 cup basmati or white rice

3 cup water

1 cup dried parsley

2 cup water

cup (1/3 cup)canola oil

2 large, sliced onions

1 cup (1 bunch) chopped green onions

1 cup chopped cilantro

tsp turmeric

tsp salt

1 2 lb(s) pre-roasted deli chicken

1 12 oz can red kidney beans with liquid

1 cup water

Directions

1. Combine rice and water in a microwave-safe pot or casserole. Cover and microwave rice at high for 10 minutes, then at medium for 10 minutes.

2. Soak dry parsley in a bowl of water. Set aside.

3. Add oil to large frying pan and heat to medium-high.

4. Slice onions and add to hot oil. Stir.

5. Add green onions and cilantro to pan.

6. Drain water from parsley and add to pan.

7. Add turmeric, ground pepper and salt to pan.

8. Continue heating and stirring until all is thoroughly cooked, then reduce heat to medium low.

9. Remove all skin from chicken, remove chicken from bones and add to pan.

10. Add lime juice, red kidney beans and water.

11. Heat through.

12. Serve Khoresh over rice.
