This all-season salad showcases wild rice. However, you can replace it with another Prairie crop, such as pearl barley or wheat berries.

Ingredients

Mustard Honey Dressing

2 Tbsp canola oil

2 Tbsp orange, juice

2 Tbsp white wine vinegar

4 tsp Dijon mustard

1 Tbsp liquid honey

tsp salt

tsp pepper

cup chopped fresh mint

Wild Rice Salad

2 cup wild rice

cup diced dried apricot

cup diced dried apple

cup currants

cup raisins

cup golden raisins

Directions

Mustard Honey Dressing

1. In small bowl, whisk together oil, juice, vinegar, mustard, honey, salt and pepper.

2. Pour over rice mixture and toss gently.

Wild Rice Salad

1. In large pot of boiling salted water, cover and cook wild rice for about 35 minutes or until tender.

2. Drain well and transfer to large bowl.

3. Add apricots, apple, raisins and golden raisins; set aside.

Preparation

1. Let salad cool completely; cover and refrigerate for at least 4 hours or for up to 2 days.

2. To serve, add mint and toss to combine.
