Chuck Hughes' melt-in-your-mouth crispy fried cheese squares are a no-nonsense appetizer that will have guests coming back for more.

Ingredients
Crispy Fried Cheese Squares1 clove garlic, crushed
cup butter (125 ml)
cup flour (125 ml)
2 cup milk (500 ml)
1 cup Emmental, grated (375 ml)
1 cup Gruyre, grated (375 ml)
1 cup of Parmigiano Reggiano cheese, grated (375 ml)
1 tsp cayenne pepper (to taste) (5 ml)
4 eggs, beaten
cup flour (125 ml)
1 cup breadcrumbs (250 ml)
Salt and pepper
Peanut or Canola oil for frying
GarnishPickled vegetables
Arugula mixed with olive oil, lemon juice & salt & pepper
Directions
Crispy Fried Cheese Squares1. Melt the butter in a saucepan. Add garlic and stir in the flour. Cook, stirring constantly, for about 2 minutes. Add the milk, whisking constantly until the sauce thickens. Bring to a boil, add the cheese and continue stirring until its all melted in. Season with cayenne, salt and pepper.
2. Remove from heat and pour into a 9-inch pan (23 cm), and cover with plastic wrap.
3. Refrigerate for at least 3 hours or until the mixture is firm.
4. Invert onto a work surface. Remove the plastic wrap. Cut into 6 large or 12 medium squares.
5. Place the flour, eggs and breadcrumbs into 3 different bowls.
6. Dredge each cheese square in the flour, then in the eggs and finally in the breadcrumbs.
7. Heat oil in a deep fryer to 350 F (180 C). Fry each cheese square for about 2 minutes or until golden brown. Drain on paper towel.
