New Recipes Pumpkin Raisin Loaf - ★Cooking Recipes★

A fruity and spicy loaf recipe that contains no butter or eggs, so it's suitable for a vegan diet. Recipe courtesy of The Everday Vegan, published by Arsenal Pulp Press.
Directions for: Pumpkin Raisin Loaf

Ingredients

1 cup whole wheat pastry flour

1 cup Kamut flour, or more whole-wheat pastry flour

cup unrefined sugar

2 tsp baking powder

tsp baking soda

1 tsp cinnamon

tsp fresh nutmeg, grated

tsp allspice

couple pinches sea salt

1 cup canned pumpkin

1 cup vanilla or plain soy milk

cup pure maple syrup

1/4 - 1/3 cup raisins

1 tsp pure vanilla extract

2 Tbsp canola oil

Directions

1. Preheat oven to 350F In a large bowl, combine dry ingredients, sifting in baking powder and baking soda, and mix well.

2. In a separate bowl, combine pumpkin, soy milk, maple syrup, raisins, and vanilla extract. Mix well, then add to dry mixture. Stir through and add canola oil just as mixture starts to come together. If your batter is very thick, add a little extra soy milk.

3. Pour into a lightly oiled 9"x5 loaf pan and bake for 45-55 minutes, until a toothpick inserted in the center comes out clean.
