This Boston-inspired eggs Benny comes with a homemade Irish soda bread, a hollandaise sauce made with a touch of clam juice, potato and cabbage hash and a little corned beef.
Directions for: The Southie

Ingredients

Irish Soda Bread

4 cups flour

cup old-fashioned oats (optional)

2 Tbsp sugar

1 tsp baking soda

4 Tbsp cold butter, cut into small chunks

1 tsp salt

1 cups buttermilk, well shaken

1 egg, lightly beaten

Seafood Hollandaise Sauce

4 egg yolks

1 Tbsp freshly squeezed lemon juice

cup unsalted butter, melted

1 pinch salt

3 Tbsp clam juice

tsp cayenne pepper

Potato and Cabbage Hash

1 lb(s) potatoes, cubed and boiled

head cabbage, diced

2 Tbsp butter

1 cup red onion, diced

Salt and pepper

Assembly

Slices of corned beef

Directions

Irish Soda Bread

1. Preheat oven to 375F (190C).

2. In a large bowl mix all dry ingredients. Crumble and mix butter into the mix, making sure not to breakup the butter too much. Consistency should be like oatmeal.

3. Mix the buttermilk and egg in a separate large bowl. Slowly add the dry ingredients, mixing in one cup at a time. Once well-combined, start portioning dough into 2-inch round balls. Wetting your hands with water may help to form the balls. Once formed placed on a greased baking sheet.

4. Score an X on the top of each ball and brush with a bit of oil. Place on baking sheet, wrapped in plastic. Proof for 30-45 minutes. Remove plastic wrap and bake for 50 minutes.

Seafood Hollandaise Sauce

1. In a stainless steel bowl, vigorously whisk together the egg yolks and lemon juice until the mixture is thickened and doubles in volume. Place the bowl over a saucepan containing a small amount of simmering water (the water should not touch the bowl). Continue to whisk the egg/lemon rapidly. Dont let the eggs get too hot or they will scramble. Slowly drizzle the melted butter and continue to whisk until the sauce doubles in volume again.

2. Remove from heat and whisk in salt, clam juice, and cayenne. Set aside.

Potato and Cabbage Hash

1. In a large skillet add potatoes, cabbage, onion, and butter and cook until brown, about 10 minutes. Season with salt and pepper.

Assembly

1. Cut soda breads in half. On each half add a few slices of corned beef, topped with a poached egg and seafood hollandaise sauce. Serve with the potato and cabbage hash on the side.
