Directions for: The Caprese

Ingredients

Pesto

2 bunch Italian flat-leaf parsley

4 clove garlic

1 Tbsp lemon juice

10 Tbsp olive oil

1 Tbsp course cracked pepper

1 tsp toasted coriander seeds

Zest of 1/2 lemon

Sprig of thyme

Sprig of oregano

Salt to taste

Sandwich

2 slices of a thick cut French bread (sourdough or another quality sliced bread can be substituted)

1 ripe heirloom tomato

1 tsp parsley salad (finely chopped parsley, garlic, pepper, and scallions)

1 Tbsp fresh mozzarella

Directions

Pesto Sandwich

1. For the pesto, finely chop the parsley and garlic. Add the zest, herbs, lemon juice, and dry ingredients to a bowl and mix. Combine with the parsley and garlic. Blend until a fine paste, while slowly adding olive oil. After the pesto is completed throw your nice slices of bread on the grill. Layer all of the sandwich ingredients on one slice of bread mozzarella first. After about 5 minutes the mozzarella should be melted and the bread should have a nice crisp with some darker caramelization. Put the other slice on top, and enjoy!
