Directions for: Cashew Chickpea Burger
Ingredients
2 cups chickpeas
2 cups cashews (salted or not)
3 limes
ground coriander
2 fingers ginger
cup canola oil
3 Roma tomatoes
1 small red onion
chipotle pure
fresh cilantro
1 Tbsp brown sugar
leaf lettuce
cup cream cheese
cup sour cream
salt and pepper
chives or green onion
burger buns (we use brioche burger buns)
cornbread (either use leftover or make your favourite cornbread recipe a day ahead)
Directions
1. Two fingers of fresh ginger peeled and cut into slices. Fry the ginger in canola oil over medium heat until candied or a light golden brown colour in a fry pan. Remove ginger from oil and set aside to cool.
2. In a food processor, pure the following in stages, emptying the processed ingredients into a large mixing bowl as you go:
3. Pure the candied ginger (but not the oil), 2 cups of salted cashews (process for approximately 10 minutes or until they turn to butter), 2 cups of drained and rinsed chickpeas (process until smooth but still have a bit of texture).
4. Add a juiced lime and a splash of the ginger oil into the processor while blending out the chickpeas to help give it a bit of moisture.
5. To the mixing bowl add 3 Tbsp of toasted and ground coriander and 1 tsp salt. Mix all ingredients very thoroughly in bowl.
6. In the food processor grind up the corn bread into crumbs. Start adding the cornbread crumbs a cup at a time until you get a dry enough consistency to be able to form mix into patties; it should take approximately 2 cups.
7. To serve, just heat them through using a skillet or fry pan on medium heat.
8. For salsa, dice and seed the tomatoes. Finely dice the red onions. Wash and rough chop the cilantro.
9. In a separate bowl: juice 2 limes add a tsp of chipotle pure, add a Tbsp of brown sugar. Add salt to taste, mix thoroughly and add to tomato mixture.
10. For Saanich sauce, fire the food processor back up and pure cup cream cheese, cup sour cream, salt and black pepper to taste. Once smooth in consistency add chopped chives and blend until just mixed in.
