Chicken Tajine with Apricots and Star Anise - ★Cooking Recipes★

Directions for: Chicken Tajine with Apricots and Star Anise

Ingredients

3 onions, sliced

3 zucchini, cut into thick rounds

3 carrots, cut into thick rounds

3 clove garlic, chopped

60 mL (1/4 cup) olive oil

125 mL (1/2 cup) dried apricots

30 mL (2 tablespoons) honey

3 pods star anise

5 mL (2 teaspoons) ground coriander

5 mL (2 teaspoons) harissa

2 mL (1/2 teaspoon) ground cinnamon

250 mL (1 cup) chicken broth

1 chicken cut into 6 pieces (or 3 thighs and 3 drumsticks) with or without skin

Salt and pepper

Directions

1. If indicated in the manufacturers instructions, soak the tajine in cold water for about 2 hours.

2. With the rack in the lowest position, preheat the oven to 180C (350F).

3. In a large skillet over medium heat, soften the vegetables in half the oil. Season with salt and pepper. Add the apricots, honey and spices. Continue cooking for about 2 minutes. Deglaze with the broth. Transfer to the tajine.

4. In the same skillet over medium-high heat, brown the chicken in the remaining oil. Season with salt and pepper. Place the chicken parts on the vegetables and baste with broth. Cover and bake until the meat pulls easily from the bone, about 90 minutes depending on the type of tajine.

5. Serve with plain couscous.
