Grilled Atlantic Salmon with Smoked Salmon, Charred Corn Garlic Aioli and Scallions - ★Cooking Recipes★

Ingredients

Grilled Atlantic Salmon

6 piece Atlantic salmon, 5 oz. each, boneless, skin on

2 Tbsp extra virgin olive oil

salt and pepper to taste

Topping

aioli (garlic mayonnaise)

6 large slices smoked salmon

1 cup grilled corn niblets

cup green onions, sliced thin

Directions

Grilled Atlantic Salmon

1. Pre-heat your grill pan to medium high heat. Brush the salmon on all sides with the extra virgin olive oil. Season the salmon with salt and pepper. Place the salmon skin side up onto the hot grill and grill for 3 minutes. Turn the salmon over and cooked skin side down for another 3 minutes. Remove from heat and allow to rest 3 minutes.

Topping

1. Place a small spoonful of aioli onto each piece of the grilled salmon. Place 1 piece of the smoked salmon on each grilled piece of fish and top with the sliced scallions and charred corn. Serve while still warm.
