Weeknight Smoked Turkey and Apple French Toast Sandwiches - ★Cooking Recipes★

Directions for: Weeknight Smoked Turkey and Apple French Toast Sandwiches

Ingredients

8 1/2-inch-thick slices egg bread, such as challah

cup (75 mL) apple butter

8 deli-thin slices smoked turkey

4 deli-thin slices Provolone cheese

2 eggs

cup (125 mL) milk

4 tsp (20 mL) Dijon mustard

tsp (1 mL) each salt and pepper

pinch ground nutmeg

2 Tbsp (30 mL) butter

Directions

1. Spread one side of each slice of bread with apple butter; top 4 slices bread with turkey and cheese and sandwich with remaining bread slices.

2. In shallow bowl, whisk together milk, mustard, salt, pepper and nutmeg; dip each sandwich to coat both sides and soak up egg mixture.

3. In a large stick-resistant skillet, melt half of the butter over medium heat; fry, two sandwiches at a time and turning once, until golden, about 5 minutes. Repeat with remaining butter and sandwiches.

4. Place sandwiches on baking sheet; bake in preheated 400F (200C) oven until slightly puffed, cooked through and cheese is melted, 4 to 6 minutes.

5. Tip: These are equally delectable using replacing turkey with ham, provolone with Swiss cheese, and apple butter with apricot jam.
