Directions for: Babaganoush Panini

Ingredients

Babaganoush Panini

1 large egg and onion bread (about 12" diameter) (1)

cup Babaganoush spread (125ml)

cup mixed roasted peppers (150ml)

salt and freshly ground black pepper

Children

4 oz deli-sliced Black Forest ham (125g)

cup sliced bocconcini or mozzarella or lactose free cheese (125ml)

Adults

4 slices proscuitto, chopped (4)

cup crumbled feta cheese (125ml)

1 tsp chopped fresh oregano (5ml)

2 Tbsp Black Mission fig spread (see recipe) (30ml)

cup chopped Black Mission figs (125ml)

1 cup orange juice (250ml)

2 tsp Balsamic vinegar (10ml)

Directions

Babaganoush Panini

1. Preheat panini maker according to manufacturer's instructions.

2. Cut bread in half horizontally. Spread each side with Babaganoush and top with peppers.

3. Assemble sandwiches.

4. Grill one half at a time in panini press, until golden brown and cheese has melted.

5. Repeat with remaining half. Cut each sandwich in half.

Children Adults Black Mission Fig Spread

1. In a saucepan, over medium heat, add figs, orange juice and vinegar.

2. Cook over medium heat, stirring constantly, until figs are soft and liquid has been absorbed.

3. Remove from heat and cool.

Makes about 1/2 cup
