French Citrus Salad - ★Cooking Recipes★

Lamb's lettuce is also known as mche, corn salad or field salad. It has dark green, small, tender leaves that are slightly nutty in flavour. Baby spinach also works nicely in this salad. Citrus is always refreshing in salad, depending on the season, you can use blood oranges or grapefruit.
Directions for: French Citrus Salad

Ingredients

Salad

cup hazelnuts, toasted and skinned (125 ml)

4 cup lambs lettuce, cleaned (1 litre)

4 blood oranges or grapefruits, segmented

Dressing

cup champagne vinegar (75 ml)

2 Tbsp hazelnut oil (30 ml)

cup olive oil (75 ml)

coarse salt and freshly cracked black pepper, to taste

Directions

Salad

1. Combine the hazelnuts, lambs lettuce and blood oranges in a medium bowl. Toss with vinaigrette. Serve immediately.

Dressing

1. To make the vinaigrette, whisk together the champagne vinegar, hazelnut oil, olive oil, salt and pepper in a small bowl until combined.
