Preheat your oven to 350F and get ready for the best oven roasted chicken youve ever had. No need for sauce, no need for gravy. The combination of citrus with Fire Rub and T-Bones Smoke Eater is delicious and all you could ever ask for. This is probably the easiest and most amazing way to cook a chicken. Enjoy! Directions for: Smokin' Fire Chicken
Ingredients
1 whole chicken
1 lemon
1 lime
1 large onion, quartered
1 large green pepper, quartered
1 large red pepper, quartered
2 Tbsp olive oil
3 Tbsp Fire Rub
3 Tbsp T-Bone's Smoke Eater spice
1 medium to large baking dish
Directions
1. Designate one of your bowls a chicken bowl. (Make sure its big enough to hold a whole chicken and then some).
2. Place the whole un-cooked chicken in the bowl.
3. Squeeze half the lemon and half the lime over one side, flip the chicken and squeeze the other halves over the other side, Work it in between wings and legs.
4. Shake Fire Rub over one side, flip and do the other side make sure seasoning is lightly coated. Work it in between wings and legs.
5. Drizzle olive oil on one side, flip and do the same on the other side.
6. Shake T-Bones Smoke Eater over one side, flip and do the other side make sure seasoning is lightly coated. Work it in between wings and legs.
7. Quarter your onions and peppers, place them in bottom of baking dish.
8. Places seasoned chicken on top of vegetables, breast down.
9. Cook at 350F for 45-60 minutes. (After 45 minutes pull the chicken out and cut into it, if its pink throw it back in, 10 minutes at a time.) Ovens vary with heat exchange.
