Pressed Chicken, Apple and Roquefort Sandwich - ★Cooking Recipes★

This recipe takes sandwich to a new, elegant level, combining the flavours of chicken, dry-roasted apples and soft Roquefort cheese between two pieces of fresh herb focaccia.

Ingredients

1 piece fresh herb focaccia bread, sliced in half

1 oz softened Roquefort cheese

4 oz grilled, cooked chicken breast, sliced thin

2 oz roasted apples (Gala apples cut into wedges and dry roasted in the voen for 20 min. at 350F)

cup fresh spinach leaves

3 whole leaves fresh sage

1 Tbsp extra virgin olive oil

Directions

1. Preheat a sandwich/panini press to medium to high heat.

2. Spread the softened Roquefort cheese on both sides of the focaccia bread.

3. Layer the grilled chicken, roasted apples, fresh sage and spinach onto one of the bread slices. Top the sandwich with the remaining slice of bread. Drizzle the olive oil over the outside of the sandwich and press the sandwich until cheese is melted and the exterior of the sandwich is crispy and golden brown.

4. Remove the sandwich from the grill and slice in half- serve while still warm.
