Directions for: Pesto Glazed Fish Kabobs on Rice with Asparagus Wraps
Ingredients
Pesto Glazed Fish Kabobs On Ri8 Bamboo or metal skewers
1 lb(s) or 800 g firm white fish (e.g. halibut or haddock)
cup basil pesto (from a jar)
1 Tbsp maple syrup
Asparagus Wraps24 pieces of asparagus (1 lb / 450 g)
1 Tbsp butter for all
12 slices of whole wheat bread
1 tsp garlic powder for all
1 can cream of mushroom soup (10 oz / 284 mL) You can also use cream of asparagus soup, but its my second choice.
Toothpicks
1 cup basmati rice
3 cup water
Skewers
Marinated fish chunks
Cooking spray
Fish cage (optional but in my opinion a must)
Method:Directions
Pesto Glazed Fish Kabobs On Ri Asparagus Wraps Method:1. Pre-heat oven to 350 F.
2. Note; if using bamboo skewers soak them in water.
3. Cut firm white fish into large cubes (approx 2). Place in a shallow pan and drizzle with pesto and maple syrup. Keep tossing to thoroughly coat. Set aside in fridge to marinate.
4. Meanwhile
Wash asparagus and break off end nodes (the tough end). Lightly spread butter on one side of each slice of bread and sprinkle with garlic powder. You can trim crusts at this point if you like.
5. Flip each piece of bread over to the other side and smear a generous amount of mushroom soup on top. Place two pieces of asparagus (corner to corner diagonally) on mushroom side.
6. Fold bread over (opposite corner to corner) and close with a toothpick. Place on a cookie sheet as they are prepared.
7. When ready to eat balance of the meal
8. Place wraps in hot oven. Set timer for 20 minutes. Pre-heat BBQ to medium (approx 350 F).
9. Place rice and water in a large microwave safe pot with lid. Set on high for 10 minutes then medium for 10 minutes.
10. When timer rings for rice
11. Lift rice with fork, cover and let stand 10 minutes. Skewer fish chunks.
12. Spray skewered fish lightly with cooking spray.
13. Grill for 2 minutes on each side or until cooked.
14. I always use a fish cage sprayed with cooking spray so that I dont drop any scrumptious fish through the grill.
