Sweet and Sour Pork with Rice - ★Cooking Recipes★

A bright and colourful mix of sweet peppers, pineapple chunks, Uncle Ben's Jasmine Rice and chunks of pork tenderloin. Brought to you by Uncle Ben's.

Ingredients

cup (60 mL) cornstarch

2 Tbsp (30 mL) soy sauce

2 Tbsp (30 mL) water

1 lb(s) (500 g) pork tenderloin, cut into bite-sized pieces

1 cup (250 mL) UNCLE BEN'S Jasmine Rice

2 Tbsp (30 mL) oil, divided

2 cup (500 mL) small broccoli florets

1 red pepper, chopped

1 can (286 g) pineapple chunks

1 cup (250 mL) prepared sweet and sour sauce

Directions

1. Whisk the cornstarch with the soy sauce and water; add the pork and toss to coat. Set aside for 10 minutes. Prepare the UNCLE BENS Jasmine Rice without butter.

2. Meanwhile, heat half the oil in a large, nonstick skillet set over medium-high heat. Add the broccoli and red pepper. Cook for 5 minutes or until tender; transfer to a plate.

3. Heat the remaining oil in the same skillet. Add the pork and cook for 10 minutes or until browned and cooked through. Add the veggies, pineapple and sauce. Simmer for 3 minutes or until heated through. Serve over rice with lime wedges.

4. Tip: Skip the batter step and use firm tofu instead of pork for a vegetarian friendly entre.
