Try these delicious bundles of cheese and cherry with a bed of greens.
Directions for: Pecorino Bundles with Dried Cherry Compote
Ingredients
Cheese Bundles16 oz pecorino cheese, crumbled
4 sheets phyllo dough
cup melted butter (60 ml)
Coarse salt and freshly cracked black pepper
Dried Cherry Compotecup sugar (75 ml)
2 cup water (500 ml)
2 Tbsp orange juice (30 ml)
1 cup dried cherries (375 ml)
1 cup brandy (250 ml)
250 g. baby greens
Directions
Cheese Bundles1. Preheat oven to 375 degrees F. Brush a baking sheet with oil.
2. Lay one sheet of phyllo on a board and brush with melted butter. Lay another sheet on top and brush some more butter. Cut into 16 squares. Repeat this process with the other 2 sheets of phyllo for a total of 32 squares.
3. Lay a square on work surface and then lay another at a 90 degree angle on top so it looks similar to a star. Place about 1 oz of crumbled cheese in the middle and gather the phyllo up and around it, pinching the phyllo in the middle at the top of the bundle. Place the bundles on the baking sheet and bake until golden, about 10-15 minutes.
Dried Cherry Compote1. Soak dried cherries in brandy for 20 minutes. In a saucepan over medium heat, dissolve sugar into water. Add soaked fruit and brandy to sugar mixture. Cook the mixture until reduced by half. Add orange juice.
2. Serve with dressed salad greens and some of the compote.
