Ice cream? Deep fried? You better believe it!
Directions for: The Deep-Fried Ice Cream Sandwich
Ingredients
Chocolate Chip Cookiescup butter
1 cup packed brown sugar
cup sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp salt
2 cups semisweet chocolate chips
Filling1 cup cream cheese
2 Tbsp lime juice
Zest of 1 lime
cup sugar
cup whipped cream
Green food colouring
6 Popsicle sticks
Assembly1 cup flour
tsp baking powder
cup milk
1 egg
⅛ cup sugar
3 cups chocolate cookies, pureed
2 cups quick-drying chocolate sauce
Oil, for coking
Directions
Chocolate Chip Cookies1. Preheat oven to 350F (175C).
2. Cream together butter and sugar until light and fluffy. Add in eggs and vanilla, mix until fully incorporated. Whisk in the flour, baking soda, and salt. Fold in the chocolate chips.
3. Roughly create the cookie dough into the shape that you want your ice cream sandwich. Bake 10-15 minutes. Place on wire rack. You may have to cut the cookies to create a more precise shape.
Filling1. Using a hand mixer combine cream cheese, lime juice, zest, and sugar in a bowl. In a separate bowl whip the whipping cream until it forms soft peaks. Slowly fold the whipped cream into the cream cheese mixture with a spatula. Add a few drops of green food colouring and mix. Pour into ice pop mold and add Popsicle sticks. Place in freezer overnight.
2. Remove Popsicle sticks and place ice cream in between 2 of the cookies. Place in freezer for 2-4 hours.
Assembly1. Preheat deep-fry oil to 450F (230C).
2. In a medium sized bowl combine flour, baking powder, milk, egg, and sugar. Dip the ice cream into the batter. Use tongs to remove and allow excess batter to drip off the sandwich. Gently place into the oil. Cook until golden brown, place on paper towel. Repeat with the other sandwich.
3. Fill one small bowl with the crushed cookies. Fill another small bowl with the quick drying chocolate sauce. Dip the fried ice cream into the chocolate sauce with a slotted spoon, allow excess to drip off. Place the ice cream into the crushed cookies and press lightly to make the crumbs stick. Place into the freezer for 5 minutes before serving.
