Directions for: Steam Whistle Chicken Karma Masala
Ingredients
Steam Whistle Chicken Karma Ma3 lb(s) (1.5 kg) boneless, skinless chicken thighs
10 oz (300 g) cooking onions, thinly sliced
oz (4 g) fresh thyme, chopped
1 Tbsp (15 mL) fresh ginger, chopped
1 Tbsp (15 mL) fresh garlic, chopped
5 Tbsp (75 g) Duke Pubs curry paste
cup (125 mL) vegetable oil
6 cup (1.5 L) water
17 oz (0.5 L) Steam Whistle Pilsner
1 lb(s) (0.5 kg) potatoes, peeled and diced
cup (125 mL) cornstarch
cup (125 mL) cold water
salt, to taste
Garnish1 oz (45 g) Duke Pubs Rhubarb Chutney
1 oz (30 g) green onions
1 oz (30 g) tomatoes, peeled, seeded and chopped

Directions
Steam Whistle Chicken Karma Ma1. Mix chicken, onions, thyme, ginger, curry powder, garlic and cup of vegetable oil. Let marinate overnight.
2. Heat cup vegetable oil in a heavy pot until smoking hot.
3. Add marinated chicken and saut until the chicken is browned.
4. Deglaze with Steam Whistle Pilsner and bring to a boil.
5. Add water and diced potatoes and boil until potatoes are tender.
6. Once potatoes are tender, add cornstarch by mixing with cold water and bring to a boil to cook starch.
7. Check seasoning.
8. To plate: Curry in round brown curry bowl placed on dinner plate, rice on the side with Naan bread and chutney.
9. Note: You are able to substitute Duke Pubs Curry Powder with Davids Bombay Curry spice, from Davids Condiments, available in retailers throughout Canada. It will not be precisely the same, but close. Or, you can simply create your own spice blend. 1 Tablespoon of commercially prepared curry powder = approximately tsp turmeric + 1 tsp cumin + tsp coriander + tsp red chili powder + tsp fresh ground black pepper + pinch of cinnamon + pinch of cardamom.
Garnish1. Serve with Steam Whistle Chicken Karma Masala.
