Shrimp and Chorizo Burger - ★Cooking Recipes★

Directions for: Shrimp and Chorizo Burger

Ingredients

1 medium chorizo sausage (about 100 g)

1 Tbsp (15 mL) vegetable oil

cup (60 mL) roasted red peppers, chopped

cup (125 mL) mayonnaise

400 g (13 oz) raw shrimp, peeled and deveined

cup (60 mL) cilantro, chopped

1 egg white

4 pieces leaf lettuce

4 burger buns

Directions

1. Chop chorizo into small, -inch pieces. Heat oil in medium skillet over medium high. Saut chorizo until browned, about 4 minutes. Remove from heat and reserve.

2. Whirl peppers with mayonnaise in a food processor until smooth. Scrape into a bowl and reserve. Wipe same processor clean and add shrimp. Pulse shrimp until chunky. Scrape into a bowl. Stir in cup (60 mL) mayonnaise mixture, cilantro and egg white.

3. Heat a skillet over medium heat. Scoop cup (125 mL) shrimp mixture into the pan and gently press into a patty. Repeat with remaining shrimp mixture. Cook for 3 minutes, or until bottom is golden. Flip and continue cooking for 3 more minutes or until patty is set.

4. Place a piece of lettuce on each bun. Top with a shrimp burger, 1 Tbsp (15 mL) red pepper mayonnaise and sauted chorizo.
