Directions for: Sun-dried Tomato Polenta

Ingredients

1 lb(s) polenta, cooked, rolled into a 2 inch diameter sausage (454 g)

cup sun dried tomatoes, chopped (125 ml)

3 Tbsp prepared pesto (45 ml)

1 Tbsp extra virgin olive oil (15 ml)

1 Tbsp pecorino romano cheese, shredded (15 ml)

Directions

1. Cut polenta sausage into inch wheels. Embed chopped sun dried tomatoes onto each of the flat sides and brush the entire surface with pesto.

2. On a non-stick skillet heat olive oil and pan fry each polenta round until they are crisp. Turning them often to prevent them from burning. When cooked, take them off the heat and garnish with a sprinkling of cheese and a droplet of prepared pesto in the center.
