Directions for: Fried Chicken and Strawberry Jalapeno Sweet Corn Waffles
Ingredients
Strawberry Jalapeno Sweet Corn1 cup (250 mL) cornmeal
1 cup (250 mL) all-purpose flour, sifted
2 tsp (12 mL) baking powder
tsp (1 mL) baking soda
1 Tbsp (15 mL) granulated sugar
tsp (2 mL) kosher salt
1 cup (375 mL) buttermilk
cup (60 mL) vegetable oil
1 large egg
cup (60 mL) pickled jalapeno peppers, minced
1 cup (250 mL) kernel corn, thawed and well-drained
cup (125 mL) strawberries, finely diced
3 green onions, chopped
vegetable cooking spray
Strawberry Black Pepper Maple1 cup (250 mL) straberries, hulled and chopped
1 cup (250 mL) pure maple syrup
1 tsp (5 mL) freshly cracked black pepper
Strawberry Butter1 cup (250 mL) unsalted butter, room temperature
cup (125 mL) fresh strawberries, chopped
Fried Chicken & Assembly1 (about 3 lbs/1.3 kg) chicken, cut into 8 pieces OR alternatively 8 small boneless, skinless chicken breasts
cup (30 mL) kosher salt, divided
2 tsp + 1 tablespoon (25 mL) freshly ground black pepper, divided
1 tsp (7 mL) paprika
tsp (3 mL) cayenne pepper
tsp (5 mL) EACH of garlic powder, onion powder
1 cup (250 mL) buttermilk
1 large egg
cup (125 mL) strawberries, pured
3 cup (750 mL) all-purpose flour
1 Tbsp (15 mL) cornstarch
1 tsp (5 mL) rosemary leaves, finely chopped
peanut or vegetable oil for frying
Directions
Strawberry Jalapeno Sweet Corn1. In a large bowl, stir together cornmeal, flour, baking powder, baking soda, sugar and salt. Set aside.
2. In another bowl, whisk together buttermilk, oil and egg, whisk into flour mixture, then fold in jalapeno, corn, strawberries and green onion until well combined.
3. Preheat a (4-grid) waffle iron and coat with cooking spray.
4. Spoon about 2/3-cup batter onto waffle iron. Close lid and cook until golden brown, about 4 minutes. Repeat procedure with remaining batter. Keep waffles in a low oven until ready to serve.
5. Makes 12 waffles.
Strawberry Black Pepper Maple1. In a small saucepan set over medium heat, stir together all ingredients, bring to a boil, then remove from heat and let cool before using.
Strawberry Butter1. In the bowl of a mini food processor, add butter and blend until smooth. Add strawberries and pulse until just combined so there are still small pieces of strawberry visible. Refrigerate until ready to use.
Fried Chicken & Assembly1. In a small bowl, whisk together 1 tablespoon salt, 2 teaspoons black pepper, paprika, cayenne, garlic and onion powder, toss with chicken until well coated, and set aside.
2. In another bowl, whisk together buttermilk, egg and pureed strawberries and set aside.
3. In another bowl, whisk together flour, cornstarch, rosemary, and remaining salt and pepper, and set aside.
4. Pour oil into a large high sided cast iron skillet to a depth of -inch depth, set over medium high-heat, and heat to 350 degrees Fahrenheit/180 degrees Celsius.
5. Working with one piece of chicken at a time, dip first into buttermilk mixture then dredge in flour mixture tapping off excess flour back into bowl. Discard buttermilk and flour mixture.
6. Place 4 chicken pieces into hot oil and fry until golden, about 5 minutes per side for boneless chicken and 10 minutes per side for chicken pieces, or until an instant read thermometer inserted into thickest part of chicken registers 165 degrees Fahrenheit/74 degrees Celsius. Repeat process with remaining chicken.
7. To plate: Place 2 waffle wedges on each of 4 dinner plates, spread with a little strawberry butter and drizzle with strawberry maple syrup. Then place 1 piece of fried chicken on top of each waffle and, if desired, garnish with fresh quartered strawberries and a little more strawberry syrup and serve immediately.
