Directions for: Amy's Triple Chocolate Bangers
Ingredients
Dough8 cups flour
⅛ cup yeast
2 eggs
3 cups buttermilk
cup sugar
3 tsp salt
cup butter, melted
1 tsp vanilla powder
1 tsp cinnamon
Glazecup butter
cup milk
1 Tbsp simple syrup
1 vanilla bean
4 oz dark chocolate
2 cups icing sugar
Meringue3 egg whites
tsp cream of tartar
2 Tbsp cocoa powder
cup sugar
Directions
Dough1. Bring milk and vanilla to boil; allow to cool to lukewarm.
2. Add warm milk, yeast and sugar to mixing bowl, stir and let sit until yeast begins to activate; bubbles and froth should appear.
3. Add flour, salt and cinnamon and mix on low until combined.
4. Add eggs one at a time, incorporating in-between additions. Add butter slowly and continue to mix until incorporated.
5. Raise speed to 2 and mix 5-7 minutes.
6. Cover and let rest until doubled in size and when pushed down with thumb it doesnt bounce back.
7. Roll out to -inch thickness, cut donuts and let rest on sheet trays for 60 minutes.
8. Fry at 375F, flip after 90 seconds and remove after another 90 seconds. Degrease on paper towels.
9. To assemble donuts, let freshly fried donuts cool to room temperature. Dip the donuts in the Glaze, top with chopped Meringue and then for the third element of Amys Triple Chocolate Banger, add dark chocolate shavings on top!
Glaze1. Combine butter, syrup and milk over medium heat. When butter is melted and liquids are combined, remove from heat and add chocolate. Stir until combined.
2. Add sifted icing sugar and whisk until smooth. Keep mixture warm over a double boiler until needed.
Meringue1. Whisk egg whites and sugar in the bowl of an electric mixer until soft peaks begin to appear. Add cream of tartar and continue to mix on high until stiff peaks appear.
2. Add cocoa powder and mix on medium until incorporated. Remove from bowl and place in piping bag.
3. On a baking sheet lined with parchment paper, pipe long straight lines the thickness of a pencil of the meringue mixture. Bake at 200F for 2 hours or until meringue is completely dry.
