Crostini Di Fegatini - ★Cooking Recipes★

A savoury and flavourful spread made of vegetables, anchovies and chicken liver to top your crostini with.

Ingredients

1 loaf Italian baguette cut into - or 1/2-inch diagonal slices

3 Tbsp extra-virgin olive oil

1 red onion, minced

1 large carrot, chopped

1 celery stalk, diced

1 lb(s) chicken livers, cleaned, trimmed and chopped

1 tsp salt

cup vin santo

cup chicken broth

1 Tbsp capers, drained

5 fillets anchovies

Directions

1. Heat olive oil in a pan, add your onion, celery and carrots to start your soffritto. Cook them down until the sugars start coming out.

2. When the vegetables are soft, add your chicken livers and salt, toss to combine and cook for until livers are browned. Add your vin santo and let reduce, then add chicken broth continue cook until liquid reduces and chicken livers become soft and easily mashed with the back of a spoon.

3. Add capers and anchovies and cook together for a few minutes.

4. Put your mixture in a blender and puree until uniform.

5. Spread over crostini and enjoy!
