Asian-inspired wonton tacos filled with stir-fried chicken breast and a coleslaw with an sesame Asian dressing.

Ingredients
1 lb(s) boneless, skinless chicken breast, sliced into small chunks
2 Tbsp oil, for frying
cup store-bought stir-fry sauce
10 wonton wrappers
Oil, for frying
4 green onions, diced
2 shallots, diced
1 Tbsp ginger, minced
1 whole Tahi chili, deseeded and finely diced
2 Tbsp cumin
cup vegetable oil
cup rice vinegar
2 Tbsp sesame oil
3 Tbsp sugar
1 cup coleslaw mix
Directions
1. Mix chicken breast with stir-fry sauce, and fry to 20 minutes.
2. To make the won ton taco shells, slowly heat up oil to 425F (220C). Have a rolling pin ready to mold the wontons. Place 1 wonton at a time in the properly tempered oil for 1 minute and then flip. After the wonton starts to bubble place on top of the rolling pin to cool down and form the taco shell shape. Repeat until all wontons have been fried and molded, set aside on a paper towel.
3. To create the Asian dressing combine green onions, shallots, ginger, Thai chili, and cumin. Use a food processor to puree ingredients. Slowly add in vinegar, oil, and sugar to processor and pulse for 2 minutes. Finish with a pinch of salt and sesame oil to taste.
4. Add 2 tablespoons of Asian dressing to the coleslaw and coat evenly.
5. To assemble: Fill each wonton shell with coleslaw and stir fried chicken. Top with cilantro and a drizzle of the Asian dressing.
