Virtuously Rich Hot Chocolate

Skim milk powder is the secret ingredient to a thick and creamy hot chocolate, but without the added fat. This recipe is for just 1 mug, so batch up for as many mugs as you need. Courtesy of Anna Olson.
Directions for: Virtuously Rich Hot Chocolate

Ingredients

2 Tbsp instant skim milk powder

1 Tbsp good quality cocoa powder (regular or Dutch Process)

1 Tbsp sugar

1 cup 2% milk

Directions

1. Stir the skim milk powder, cocoa powder and sugar in a small dish.

2. Whisk in cup of the cold milk to blend.

3. Pour the remaining milk plus the cocoa mixture to a small pot and slowly bring up to just below a simmer, stirring often. Ladle into a mug and serve.
