Take your taste buds to New York with this fanciful funnel cake topped with vanilla ice cream and homemade candy apples.
Directions for: The Big Apple Funnel Cake
Ingredients
Funnel Cake2 cups milk
2 tsp vanilla
1 egg, beaten
2 cups flour
1 tsp salt
1 tsp baking soda
2 Tbsp sugar
4 Tbsp (1/2 stick) butter, melted
Oil, for frying
Candy Apples4 medium apples, two whole, two 1/4 cut
Popsicle sticks
cup water
2 cups sugar
cup corn syrup
1 Tbsp white vinegar
1 tsp red food colouring
AssemblyCaramel sauce
Vanilla ice cream
Icing sugar
Directions
Funnel Cake1. In a bowl combine milk, vanilla, and eggs. In a separate bowl combine flour, salt, baking soda, and sugar. Slowly incorporate the dry mix into the wet mix. Add in the melted butter until well combined. In a deep-sided frying pan slowly warm up oil to 350F (175C). Once that temperature is reached, slightly lower the temperature to keep the oil stable.
2. Fill a squeeze bottle or piping bag with your funnel cake mixture. You can place the ring of a spring form pan in the oil to create a perfect circle. Start to pour the funnel cake mix over the pan of oil in a circular shape. As you pour, make sure to cross over the funnel thats frying to keep the shape. When youre happy with the design, let it cook for two minutes on each side. Place on a wire rack to drain off the extra oil. Continue until all batter is used.
Candy Apples1. Wash and dry the apples. Place apples on a pan lined with parchment. Insert Popsicle sticks into the base of the apples/slices. Place sugar, water, corn syrup, vinegar, and food colouring into a pot and bring to a boil. Do not stir the mixture because it will create unwanted crystals. Using a candy thermometer place into the liquid and cook until 290F (143C).
2. Remove from heat, dip in the apples, and place on the lined pan. Let the candy harden. Keep the remaining candy on a low heat (to later make the candy ribbons).
Assembly1. Place the funnel cakes on plates. On the centre add a whole apple and a few slices around the plate. Add 3 scoops of ice cream and drizzle with caramel sauce. Taking the pot of liquid candy, use a fork to drizzle all over the funnel cake. The candy will harden quickly. Then sprinkle icing sugar all over and enjoy!
