Years ago, when I lived in Kingston, there was a vegetarian restaurant called The Sunflower and they made a sandwich very much like this one. The restaurant is long gone, but I have never forgotten this sandwich. You might think its strange to put alfalfa under the broiler, but trust me, its amazing. Alfalfa is really a member of the pea family, making it a legume. It is a remarkable plant as it can be planted anywhere in the world, in any season, and is ready for harvest in only 7 days.Alfalfa sprouts are low in saturated fat, sodium, and cholesterol, and high in dietary fibre, vitamin C, vitamin K, riboflavin, folate, magnesium, phosphorus, zinc, copper, manganese, protein, vitamin A, thiamin, pantothenic acid, calcium and iron.

Directions for: Sunflower Sandwich
Ingredients
1 piece rye bread (or any kind)
2 tsp mayonnaise (real or vegan)
tsp dijon mustard
4 slices tomato (or enough to cover your piece of bread)
Freshly ground sea salt and black pepper
4-6 thin slices red onion
1/2 to 1 cup alfalfa sprouts
Thinly sliced old cheddar cheese (use a cheese plane to get thin slices, and use just enough to cover the alfalfa sprouts) or enough meltable vegan cheese to cover
1 tsp raw sunflower seeds
Directions
1. Preheat broiler.
2. Toast the bread and then spread one side with mayo and Dijon mustard.
3. Put tomato slices on top and sprinkle with salt and pepper.
4. Put red onion on top of tomatoes and alfalfa on top of onion.
5. Cover alfalfa with cheese and scatter sunflower seeds on top.
6. Put under broiler until cheese is melted and sunflower seeds are browned. Keep a close eye on it because you dont want the sunflower seeds to burn.
