Bacon Marmalade BLT - ★Cooking Recipes★

Directions for: Bacon Marmalade BLT

Ingredients

Bacon Marmalade

2 lb(s) smoked bacon, diced

1 yellow onion, diced

5 cloves garlic, minced

3 Tbsp dried thyme

1 cup sugar

cup molasses

1 oranges, zested and juiced

bottle red wine

1 Tbsp butter

Fried Green Tomato

3 green tomatoes, sliced

2 cups all-purpose flour

2 cups corn flour

2 eggs

2 cups milk

salt and pepper

Directions

Bacon Marmalade

1. In a heavy bottom pot add butter, onion and garlic. Let sweat down then add bacon. Cook 5 minutes then add remaining ingredients. Cook and reduce down until thick and syrupy in texture. This process takes about 20-30 minutes on medium to low heat.

Fried Green Tomato

1. Preheat oil in pot until 350F. Mix together all dry ingredients and beat together all eggs and milk. Three step breading process: Dredge slices of tomatoes in flour mixtures then egg wash and transfer back into the flour mixture. Fry in hot oil until golden brown.

2. On your favourite bread (we use our house-made focaccia), spread mayonnaise on top and bottom slices. Place two fried green tomatoes on bottom bread, spoon bacon marmalade on top of tomatoes, then leafy greens. Place top slice of bread and there you have a yummy Bacon Marmalade BLT!
