New Recipes Vegetable Cocktail Consomm - ★Cooking Recipes★

This is the coolest consomm I have ever tried. You won't believe how good it looks and tastes after you've clarified it. Yield is 4 servings.
Directions for: Vegetable Cocktail Consomm

Ingredients

2 1 L bottles vegetable cocktail

4 egg white

1 Bay Leaf

coarse salt and freshly cracked black pepper

Directions

1. Put the vegetable cocktail in a large stockpot.

2. Lightly whisk the egg whites and add eggshells and bay leaf.

3. Stir the egg white mixture into the vegetable cocktail and very slowly bring to a simmer while continually stirring the mixture on low heat. Do not boil. This is very important.

4. Keep stirring until raft (solid mass) forms.

5. Gently simmer the vegetable cocktail mixture about 45 minutes.

6. Carefully ladle the vegetable cocktail consomme from the pot and strain it through a cheesecloth-lined strainer being careful not to break the raft (solid mass) of egg white mixture. This will cause the consomme to become cloudy.

7. Serve hot.
