Directions for: Cantaloupe Granita

Ingredients

cup sugar (125 ml)

3 Tbsp water (45 ml)

2 cantaloupes, peeled, seeded and cubed

1 tsp lemon juice (5 ml)

1 tsp lemon zest (5 ml)

1 sprig of mint, fresh, for garnish

Directions

1. In a small sauce pan and over medium add sugar and water. Continue to cook over low-medium heat until sugar dissolves, stirring occasionally. When dissolved set aside until needed.

2. Add cubed cantaloupe chunks, lemon juice and zest to a food processor and puree until smooth. Add sugar syrup to the melon mixture and stir well. Pour mixture into a large shallow pan and freeze.

3. 30 minutes later, take semi-frozen mixture out of the freezer and stir to brake up the crystals. Place back in the freezer and allow mixture to freeze and crystallize completely, about 3 to 4 hours.

4. Serve with a sprig of mint.
