Directions for: Man-Made Paella
Ingredients
2 Tbsp olive oil (30 ml)
lb(s) peeled and deveined shrimp
1 pkg of chicken sausage
1 medium onion, sliced
2 clove garlic, minced
1 cup long grain rice (375 ml)
tsp paprika (2 ml)
tsp ground turmeric (2 ml)
2 strands of saffron
4 cup tomatoes, peeled, seeded and diced (1 L)
2 can chicken broth
salt and pepper to taste
1 cup peas, freshly shelled (375 ml)
Directions
1. In a small glass bowl add 1 tbsp of water and allow the saffron strands to soak.
2. In a large heavy saut pan, heat 1 tbsp olive oil over medium high-heat. Cook shrimp until just pink on both sides, 4 to 5 minutes. Transfer to a plate and set aside until needed.
3. Add remaining oil and sausage to pan, cook over medium-high heat until the sausage is golden brown. Add onion, and cook stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice and cook, stirring to coat until rice is translucent 1 to 2 minutes.
4. In a glass bowl combine paprika, turmeric, strained saffron juice, tomatoes, and broth and add to the cooking sausage/ rice mixture. Scrape and stir browned bits from bottom of pan with a wooden spoon. Season to taste with salt and pepper.
5. Bring mixture to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all the moisture. Stir in just before serving. Cook for 1 more minute. Stir in cooked shrimp and serve immediately.
