Biscuits and gravy in non-traditional fashion! Steamed buns hold Peking duck, a medley of veggies, a scallion dressing and homemade duck gravy.

Ingredients
Steamed Buns1 pkg steamed bun flour, make as directed
cup flour, for dusting work surface
16 squares parchment paper (4-inch by 4-inch)
Scallion Dressing3 stalks green onion, minced
2 fresh red chili, minced
1 tsp rice vinegar
3 cloves garlic, minced
1 Tbsp fresh ginger, grated
Zest of 1 orange
Zest of 1/2 lemon
3 Tbsp vegetable oil
1 Tbsp hoisin sauce
1 pinch each salt and pepper
Duck Gravy2 Tbsp oil
1 cup duck giblets
1 stalk celery, diced
1 carrot, diced
onion, diced
1 clove garlic, chopped
2 Tbsp butter
4 Tbsp flour
2 cups chicken stock
1 piece ginger, peeled and chopped
Assembly1 whole premade Peking duck, smoked and cured
2 carrots, shredded
red cabbage, shredded
2 green onions, sliced
Coriander
1 red Thai chili, sliced
Directions
Steamed Buns1. Follow the directions on the steamed bun flour packed and make accordingly. Allow your dough to rest for 1-2 hours covered in a warm area.
2. Add flour to your work surface and cut the dough like a pie into 12 pieces. Roll out the pieces to be -inch thick. Cut circles using a 3-inch cutter and place on parchment squares. Cover with plastic wrap for 25 minutes.
3. Steam the buns for 15 minutes.
Scallion Dressing1. Add all ingredients to food processor and blend. Remove and place into a squeeze bottle. Place at room temperature.
Duck Gravy1. In a small pot add cooking oil, giblets, celery, carrot, onion, and garlic. Cook for about 5 minutes. Add butter and melt. Sprinkle the flour over the ingredients and cook for 2 minutes, stirring. Add stock and whisk. Reduce heat, add ginger, and simmer until thick.
Assembly1. Remove the breast and leg meat from the duck. Slice and shred.
2. In a bowl mix together shredded carrot, red cabbage, green onions, coriander, and red Thai chili. Coat with the scallion dressing.
3. Assemble your steamed buns by filling with the carrot and cabbage slaw, shredded duck, and duck gravy. Garnish with coriander and green onion slices. Serve with four buns to a plate.
