Directions for: Apple & Pecan Raclette
Ingredients
Apples5 medium apples (McIntosh), cut into 2 cm wedges
2 Tbsp canola oil
3 Tbsp salted butter
40 g brown sugar
pinch salt
pinch ground nutmeg
Pecanscup pecans, roughly chopped
2 Tbsp butter
5 Tbsp brown sugar
generous pinch fleur de sel (good-quality sea salt)
Potatoes350 g potatoes
2 Tbsp olive oil
salt and pepper
To Serve400 g Raclette cheese
Directions
Apples1. Put the butter and oil in a skillet over medium-high heat. Allow the butter to melt and add apples. Saut the apples to coat with butter mixture.
2. Add the brown sugar with a pinch of salt and nutmeg. Cook until caramelized, roughly 8 to 10 minutes.
Pecans1. Melt the butter in a sauce pan and add brown sugar. Add the pecans and mix all together. Saut for 30 seconds and add fleur de sel.
2. Once caramelized, spread evenly and let the mixture cool on a roasting tray.
Potatoes1. Peel and slice or cube the potatoes.
2. Add olive oil to frying pan, add the potatoes (season with salt) and saut on a medium-high heat until cooked and golden. Adjust seasoning to taste.
To Serve1. Preheat oven at 450F.
2. Put the fried potatoes in the bottom of a roasting tray. Add the apples and top with the pecans. Spread the Raclette cheese in slices. Grill for 8 minutes or until melted.
