Directions for: Curry with Chicken or Fish on Whole Wheat Pasta with Asparagus
Ingredients
2 tsp peanut oil (10 mL)
1 onion, finely chopped
4 to 6 tsp prepared garlic (4 cloves)
2 tsp prepared ginger (1 tsp fresh)
1 to 2 lemongrass stalks
3 tsp mild curry powder (15 mL)
tsp turmeric (2 mL)
3 bay leaves
cup non fat evaporated milk (175 mL)
cup vegetable broth (125 mL)
1 tsp coconut extract (5 mL)
1 Tbsp fish sauce (15 mL)
4 to 6 boneless skinless chicken breasts (675 g)
1 piece of firm fish such as halibut
2 tomatoes
4 to 5 cups whole wheat or multi grain spiral pasta (1 quart)
Olive oil (optional)
Basil leaves (optional)
24 spears 20 to 24 asparagus spears (1 lb or 450 g)
Butter (optional)
Directions
1. Heat oil over medium heat in a large fry pan.
2. Add onion and stir for a few minutes until soft. Add garlic and ginger.
3. Wash and peel off the tough outer layer of lemongrass. Slice off any sharp ends (only use the lighter colored tender part). Rinse and pound with a small mallet or kitchen hammer to release oils, then slice finely and add to pan.
4. Add curry, turmeric and bay leaves. Stir until it starts to smell reeeeallllly good!
5. Add evaporated milk, vegetable broth, coconut extract and fish sauce to pot and stir.
6. Remove 1/4 of the sauce to a smaller stovetop pot and set aside. Place chicken breast in curry base and simmer turning occasionally. Cover and set timer for 15 minutes. Place the fish in the smaller pan of curry sauce. Slice tomatoes into cubes adding to both pans.
7. Simmer the fish and chicken until they are both cooked through (chicken is no longer pink and fish flakes). Boil water for pasta.
8. Cook pasta. Set timer for 10 minutes or follow package directions.
9. When timer rings, drain and rinse pasta in a colander under hot water. Return pasta to pot (no heat) and toss with a little olive oil and spice if you wish.
10. Place asparagus in a microwave-safe dish with lid. Add a tiny amount of water to create steam. Cover and microwave at high for 6 minutes, then let stand. When pasta and curry are ready, microwave for one additional minute.
11. Add butter. Enjoy!
