Directions for: Oregano-Crusted Lamb
Ingredients
Leg of Lamb1 small (4-4.5kg) leg of lamb, bone removed
2 bunch oregano, picked and chopped roughly
4 clove of garlic, peeled and chopped
lemon, zest only
cup olive oil
salt and pepper
Lemon Potatoes15-18 small new potatoes, about 800g
3 Tbsp olive oil
1 tsp dried oregano
1 Tbsp butter
juice of 1 lemon
salt and pepper
Greek Salad2 medium ripe tomatoes, cored and cut into bite sized wedges
1 red pepper, cored, seeds removed and cut into bite sized pieces
1 cucumber, peeled and cut into bite sized pieces
1 red onion, cut into bite sized pieces, soaked in cold water and drained
cup black olives, pitted
1 cup feta, cut into 1 inch cubes
1 tsp fresh oregano
Greek Salad Dressing1 Tbsp feta cheese, finely crumbled
1 tsp dried oregano
1 small clove garlic, finely minced
juice and zest of 1 lemon
2 Tbsp red wine vinegar
2 Tbsp olive oil
salt and pepper
Grilled Pita4-5 pitas
1 Tbsp olive oil
Directions
Leg of Lamb1. Combine oregano, garlic, lemon zest and olive oil in a small mixing bowl. Season lamb generously with salt and pepper. Rub inside and outside of lamb with marinade. Roll leg back up and truss with butcher string
2. Preheat oven to 375. Pat any excess olive oil off the lamb leg. Grill the lamb leg until all sides have developed a rich, dark brown crust.
3. Place the lamb into roasting pan and roast, basting occasionally with pan juices, about 1 hours, or until thermometer inserted in thickest part of leg registers 150. Allow the lamb to rest, covered, for at least 10 minutes.
Lemon Potatoes1. Preheat oven to 350. Heat olive oil in large, oven safe pan over high heat. Add potatoes, searing until sides are golden brown. Season with salt, pepper and oregano.
2. Add butter and place pan into oven. Bake until potatoes are tender, about 30 minutes. Remove from heat, add lemon juice and season to taste with additional salt and pepper.
Greek Salad1. Combine all ingredients in a large mixing bowl.
Greek Salad Dressing1. Whisk together all dressing ingredients and toss with salad.
Grilled Pita1. Preheat grill. Lightly brush olive oil on both sides of pitas; grill until golden and warmed through.
