Weeknight Chicken Cordon Bleu - ★Cooking Recipes★

With just a few adjustments to the classic recipe this dish has all the flavour but none of the fuss of the traditional dish. Brought to you by Uncle Ben's.
Directions for: Weeknight Chicken Cordon Bleu

Ingredients

4 boneless, skinless chicken breasts

4 slices Black Forest ham

4 slices Swiss cheese

tsp (2 mL) each salt and pepper

2 Tbsp (30 mL) Dijon mustard

cup (125 mL) panko-style breadcrumbs

2 Tbsp (30 mL) fresh parsley leaves, finely chopped

1 cup (250 mL) UNCLE BEN'S Jasmine Rice

2 Tbsp (30 mL) prepared pesto

Directions

1. Preheat the oven to 375F (190C). Slice each chicken breast through the centre so it opens like a book. Place a piece of ham and cheese in the centre. Fold the chicken to enclose the filling. Season with salt and pepper.

2. Place chicken on a foil-lined baking sheet. Brush the top of each chicken breast with the mustard. Toss the breadcrumbs with the parsley and butter until evenly coated. Sprinkle the breadcrumbs over each chicken breast. Bake for 25 minutes or until cooked through.

3. Meanwhile, prepare the UNCLE BENS Jasmine Rice without the butter. Gently stir the pesto into the cooked rice. Serve chicken breasts with rice.
