Directions for: Sun-dried Tomato and Goat Cheese Spread

Ingredients

1 lb(s) goat cheese, softened (454 g)

lb(s) of cream cheese, softened (225 g)

cup sun-dried tomatoes, chopped (125 ml)

cup green olives, pitted and chopped (125 ml)

cup black olives, pitted and chopped (125 ml)

1 tsp anchovy paste (5 ml)

4 Tbsp basil, finely minced (60 ml)

3 Tbsp extra virgin olive oil (45 ml)

2 Tbsp balsamic vinegar (30 ml)

Directions

1. In a medium glass bowl combine goat and cream cheese and mix until well blended. Make a ball out of the cheese and place it in the center of a large serving platter.

2. In a separate medium glass bowl combine the sun-dried tomatoes, olives, anchovy paste, basil, olive oil and vinegar. Pour the mixture over the cheese. Pressing down so that it gets attached to the cheese. Serve with pita chips arranged around the cheese.
