Iceberg lettuce, cherry tomatoes, cucumber, mild Cheddar and seasoning transform into a salad you can hold in your hand.
Directions for: Salad on a Stick

Ingredients

head iceberg lettuce, cut into small chunks

12 cherry tomatoes

8 oz mild Cheddar, cut into cubes

English cucumber, cut into chunks

cup extra-virgin olive oil

2 Tbsp red wine vinegar

1 tsp Italian seasoning

Kosher salt and freshly ground black pepper

Directions

1. Build each skewer by threading on a chunk of lettuce, a tomato, a cheese cube, lettuce chunk, cucumber chunk and finally, another lettuce chunk. Arrange the skewers on a platter.

2. Whisk together the oil, vinegar, Italian seasoning and some salt and pepper in a small bowl. Right before serving, brush the dressing onto the skewers.
