Directions for: Mascarpone Napoleon with Fresh Berries
Ingredients
Coulis3 cup frozen, Presidents Choice Wild Blueberries
1 Tbsp sugar
Mascarponecup whipping cream
1 container of mascarpone, at room temperature
cup sugar
1 tsp pure vanilla extract
Zest of half a lemon
1 pkg of Presidents Choice Phyllo Pastry, thawed
1 cup melted butter
cup sugar
cup cinnamon
2 cup fresh strawberries, sliced
2 cup fresh blueberries
Fresh mint to garnish
Directions
Coulis1. In a small saucepan, on medium-heat, add blueberries and sugar and cook until mixture is heated through and sugar has dissolved. Remove mixture from heat and let cool. Using an immersion blender, puree blueberry mixture until smooth. Pass mixture through a fine sieve and set aside or refrigerate until needed.
Mascarpone1. In a large, stainless steel bowl add cream and whisk until soft peaks form. Fold mascarpone into whipped cream, add sugar, vanilla and lemon zest, continue to fold only until combined. Set aside. In a small bowl, combine cinnamon and sugar. Set aside.
2. Preheat the oven to 400C.
3. Place one sheet of phyllo pastry on a large wooden cutting board. Brush phyllo with melted butter and evenly sprinkle with sugar and cinnamon. Layer another piece of phyllo on top and repeat process building three layers.
4. Using a knife, cut the layered phyllo sheets into 12 even squares, by slicing two rows horizontally and three rows vertically.
5. Gently transfer phyllo layered squared onto a parchment lined baking sheet and bake in oven for approximately 3 to 4 minutes or until golden brown. Let cool.
6. Add mascarpone mixture to either a piping bag or plastic sandwich bag with a corner finely snipped.
7. To plate add a small dollop of mascarpone mixture to centre of plate (to secure phyllo square to plate). Add one phyllo sqaure, then generously pipe mascarpone mixture on phyllo, top with a portion of fresh strawberries and blueberries. Top with phyllo square and repeat layering process.
