Directions for: Lobster Avocado Cocktails
Ingredients
Lobster Avocado Cocktails4 1 lb(s) lobsters, cooked, cleaned, cut into 1 pieces, reserve 4 claws for garnish
2 large ripe avocado, pitted, peeled and coarsely chopped
3 Tbsp finely chopped red onion
2 Tbsp fresh lime juice
3 Tbsp coarsely chopped fresh cilantro
1 romaine heart, finely shredded, reserve 4 small leaves for garnish
4 lemon wedges
Salt & pepper to taste
Cocktail Sauce1 cup ketchup
2 Tbsp horseradish
2 Tbsp lemon juice
1 tsp Worcestershire sauce
1 dash hot sauce
Salt and freshly ground black pepper
Lemon Remoulade1 cup mayonnaise
2 lemons, juice and zest
2 Tbsp cornichons, minced
2 Tbsp capers, minced
2 Tbsp chopped parsley leaves
Salt and freshly ground black pepper
Directions
Lobster Avocado Cocktails1. In a medium mixing bowl add the onion and lime juice. Let stand for a few minutes. Add the avocado, diced lobster meat and cilantro. Mix together well and season the lobster avocado salad with salt and pepper. Divide the shredded romaine lettuce evenly into four martini glasses. Place the lobster avocado salad on top of lettuce. Top with 1 tablespoon of cocktail sauce and Remoulade sauce. Garnish with romaine hearts, lobster claw and lemon wedge.
Cocktail Sauce1. In a small mixing bowl, combine all of the ingredients together. Season with salt and pepper. Refrigerate until ready to use.
Lemon Remoulade1. Whisk all of the ingredients together in a small mixing bowl. Season the sauce with salt and pepper. Refrigerate until ready to use.
